Carrie's Cupcakes

So remember when I said I may have a new hobby? I was right. Cupcaking is fun! I am an amateur for sure, I mean, if there was something lower then amateur I'd be that but it is a lot of fun anyway. Some of my cupcakes have come out great and other OK. Here is what I have been doing...

After the Irish Bailey's Cream cupcakes from St. Patty's Day, I did a Cadbury Creme cupcake for Easter in which I gutted the actual candy to make the icing:
Then I got a new mixer and became all "professional" ish! Isn't it peerty!
My first batch in new mixer was a chocolate cupcake with peanut butter whipped frosting. The frosting was intense!
Then the next night I couldn't help but try another one so I made a batch of Pink Lemonade ones. My favorite!! I was super impressed by these ones and I even tried a dual colored frosting! You can also see the kind of mess I made with frosting...it was comical....
My next adventure was a Margarita cupcake...which have turned out to be my mom's favorite and I have made another double batch since:
Then Anne asked me to do some for a baby shower, so I made Cookies and Cream ones. The only thing was I had to make the icing blue so it was baby shower-ish, so they looked a little "off" but I think they tasted really good.

On Mother's Day Jason got me an appropriate apron:
...and then last but certainly not least, last night I made a chocolate cupcake. The website called it "Better than Sex" but I think my colleagues and I agreed that Death by Chocolate was a good name. It was a chocolate cupcake with chocolate chips, filled with chocolate mousse, topped with chocolate ganache and a white chocolate drizzle. Yeah that's chocolate X5! It was a big job and left my kitchen in a complete mess!
It's been fun and the best part has been that I've had taste testers at work to enjoy them with. When school is over I'll have to make even smaller batches. Some adventures for the future are some Orange Dreamsicle ones, Carrot Cake ones, and another chocolate one of sorts. We'll see....
